Ingredients
3-4 lbs chicken
3 garlic cloves, minced
Juice of 1 sour orange
¼ cup olive oil
1 medium onion, chopped
1 medium green bell pepper, chopped
1 parsley sprig, chopped
1 cup tomato sauce
2 cups chicken consommé
½ cup green olives, chopped
Salt and pepper to taste
1 cup dry white wine
4 cups cooked white rice
Directions
In a mixing bowl, combine the chicken pieces, garlic, and sour-orange juice. Toss, and marinate for at least 2 hours, covered, in the refrigerator.
Heat the oil in a large, heavy saucepan, and add the chicken pieces with their marinade. Saute over medium heat until the chicken is browned on both sides, 6 or 7 minutes per side. Add the onion, green pepper, and parsley, and continue cooking for about 2 more minutes.
Stir in the tomato sauce, chicken consommé, and olives. Season with salt and pepper, and stir in the wine.
Cover, bring to a simmer, and reduce the heat. Continue simmering until the chicken is cooked, about 45 minutes. Stir occasionally, and correct the seasoning if necessary. When done, serve immediately over a bed of white rice.
