Description

This Christmas Eve oyster stew recipe includes Louisiana-style hot sauce for a kick, while green onion and red bell pepper add color to the holiday dish.

Ingredients

1/4 cup butter
1 cup finely chopped celery
1/2 cup chopped green onion
1/2 cup chopped red bell pepper
2 pints half-and-half
1 teaspoon dried parsley
salt and ground black pepper to taste
1 (12 ounce) can oysters
2 dashes Louisiana-style hot sauce

Directions

1 Melt butter in a large saucepan over medium heat until it begins to foam. Add celery, green onion, and bell pepper; cook and stir until soft, about 10 minutes.
2 Stir in half-and-half and parsley, season with salt and black pepper, and cook until just begins to boil. Add oysters, liquid from can, and hot sauce; bring to a simmer and cook until oysters begin to curl, 10 to 15 minutes.
3 Remove stew from heat; let sit before serving, 5 minutes.
