Banana Nut Cookies
Description
Make these banana nut cookies the next time you have some overripe bananas — you can even eat them for breakfast if you want!
Ingredients

2 1/4 cups all-purpose flour

2 teaspoons baking powder
•
1/2 teaspoon salt
•
1/3 cup shortening
•
1 cup white sugar
•
2 eggs
•
1/2 teaspoon vanilla extract
•
1/4 teaspoon lemon extract
•
3 ripe bananas, mashed
•
1/2 cup ground walnuts

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease baking sheets or line with parchment paper.

Mix flour, baking powder, and salt together in a bowl.

Beat butter and sugar in a large bowl with an electric mixer. Beat in eggs, vanilla, and lemon extract, then beat in bananas and walnuts. Gradually mix in dry ingredients. Drop spoonfuls of dough onto the prepared baking sheets.

Bake in the preheated oven until lightly colored, 12 to 15 minutes. Transfer to wire racks to cool.
