Lemon Custard Filling

Description

This lemon custard recipe is easy to make at home. It's deliciously sweet and tart and makes the perfect filling for cakes and mini pie shells.

Ingredients

1/2 cup white sugar
1/4 cup cornstarch
1/4 teaspoon salt
3/4 cup water
2 large egg yolks
1/3 cup lemon juice
2 tablespoons unsalted butter

Directions

1 Fill the bottom of a double boiler with water and bring to a gentle simmer over medium heat.
2 Whisk sugar, cornstarch, and salt together in the top of the double boiler. Gradually whisk in water until smooth and no dry pockets remain. Place over simmering water and cook, whisking constantly, until the mixture is hot and the sugar is fully dissolved, about 3 to 5 minutes.
3 Whisk egg yolks in a small bowl. Slowly whisk about 1/4 cup of the hot sugar mixture into the yolks to temper them. Pour the yolk mixture back into the double boiler, whisking constantly. Continue cooking, whisking constantly, until the custard thickens and coats the back of a spoon, about 3 to 5 minutes more.
4 Remove from heat and stir in lemon juice and butter until smooth. Press plastic wrap directly onto the surface to prevent a skin from forming. Let cool completely before using.
