Ingredients

1 cup butter, softened
1 cup brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup infant oat cereal
1 1/2 cups quick-cooking oats
1 cup cooked quinoa

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
2 Beat butter, brown sugar, and white sugar together in a bowl until fluffy. Add egg and vanilla extract; mix until combined.
3 Whisk flour, baking soda, and salt together in a bowl; add to butter mixture until dough is just mixed. Fold in oats and quinoa. Drop dough by teaspoonfuls onto baking sheet, approximately 2 inches apart.
4 Bake in the preheated oven until edges are golden, 10 to 15 minutes. Let cool on baking sheet for 5 minutes; transfer to a wire rack to cool completely.
