S'mores Pieces Cheesecake

Description

This s'mores-inspired recipe features S'mores Baking Pieces and rich cheesecake baked over a decadent bed of fudgy brownies in a graham cracker crust.

Ingredients

1 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup butter or margarine, melted
1 1/4 cups sugar
6 tablespoons butter or margarine, melted
1 teaspoon vanilla extract
2 eggs
1 cup all-purpose flour
2 tablespoons all-purpose flour
1/3 cup HERSHEY'S® Cocoa Powder
1/2 teaspoon baking powder
1/2 teaspoon salt
3 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 tablespoon vanilla extract
3 eggs
1 (7 ounce) package HERSHEY'S® S'mores Baking Pieces, divided
3 tablespoons heavy cream, divided

Directions

1 Preheat the oven to 350 degrees F (175 degrees C). Grease sides of a 9-inch springform pan; wrap outside of pan with aluminum foil, extending at least 2 inches up sides.
2 Combine graham cracker crumbs and 2 tablespoons sugar in a small bowl until well combined. Stir in ¼ cup melted butter until mixture resembles sand; press into the bottom and ½ inch up sides of the prepared pan.
3 Bake in the preheated oven for 8 to 10 minutes. Cool.
4 Combine 1 ¼ cups sugar, 6 tablespoons melted butter, and 1 teaspoon vanilla extract in a large bowl; mix in 2 eggs until blended. Stir in 1 cup plus 2 tablespoons all-purpose flour, cocoa powder, baking powder, and salt until incorporated. Spread on crust.
5 Bake in the preheated oven until edges begin to pull away from sides of the pan, 25 to 30 minutes.
6 Meanwhile, beat cream cheese, ¾ cup sugar, and 1 tablespoon vanilla extract in a large bowl until smooth. Beat in 3 eggs, one at a time, beating well after each addition.
7 Spoon cheesecake mixture over brownie immediately after removing from the oven. Place cheesecake in a deep baking pan; add enough hot water to come halfway up sides of the pan.
8 Bake in the preheated oven until center is set, 45 to 50 minutes. Transfer springform pan to a wire rack. Run a paring knife around sides of the pan to loosen cake. Cool to room temperature, 30 to 60 minutes. Remove sides of the pan.
9 Reserve 2 tablespoons marshmallows and ¼ cup chocolate chips from s'mores baking pieces separately; set aside.
10 Place reserved 2 tablespoons marshmallows and 1 tablespoon cream in a small microwave-safe bowl. Microwave on medium (50% power) for 10 seconds; stir. Continue microwaving in 5-second intervals, stirring after each interval, until marshmallows melted and mixture is smooth. Spread over top of cheesecake. Sprinkle remaining s'mores baking pieces over top; press lightly into marshmallow mixture.
11 Place reserved ¼ cup chocolate chips and remaining 2 tablespoons cream in a small microwave-safe bowl. Microwave on medium (50% power) for 10 seconds; stir. Continue microwaving in 5-second intervals, stirring after each interval, until chocolate is melted and mixture is smooth. Drizzle over top of cheesecake.
12 Cover cheesecake with plastic wrap; chill in the refrigerator before serving, at least 2 hours.
