Description

This potato salad recipe is super easy to make because the eggs and potatoes are cooked at the same time in your Instant Pot for a hassle-free dish.

Ingredients

1 cup water
2 pounds red potatoes, cut into 1-inch chunks
2 eggs
1/3 cup mayonnaise
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1 celery stalk, diced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon chopped fresh chives

Directions

1 Place the steam insert inside a multi-functional pressure cooker (such as Instant Pot); add water to the Pot. Add potatoes and eggs to the insert; close and lock the lid. Select high pressure according to manufacturer's instructions and set the timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
2 Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
3 Place potatoes in a large bowl. Peel eggs, reserve egg yolks in a bowl; chop egg whites and add to potatoes. Mash yolks with a potato masher or fork; whisk in mayonnaise, vinegar, and mustard until well combined.
4 Add celery to potato mixture; stir in egg yolk dressing until evenly coated. Season with salt and black pepper; sprinkle with chives.
5 Cover the bowl with plastic wrap; chill in the refrigerator before serving.
