Ingredients

1/4 cup olive oil
1 large yellow onions, chopped
3/4 cup chopped red onion
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon salt, or more to taste
1 bay leaf
1/2 teaspoon ground black pepper
6 cups chicken broth, or more to taste
3 pounds cooked pulled pork
1 pound dry split peas
1 cup chopped carrot

Directions

1 Heat olive oil in a 4-quart pot over medium-low heat. Add yellow and red onions, garlic, salt, oregano, bay leaf, and black pepper; cook and stir until onions are translucent, 10 to 15 minutes.
2 Stir in chicken broth, pork, split peas, and carrots; bring to a boil. Reduce heat to low; simmer until split peas are soft, about 1 1/2 hours.
