Description

This mincemeat fruitcake recipe is very easy to make with candied mixed fruit, condensed milk, and walnuts for 2 quick and delicious holiday loaves.

Ingredients

butter
2 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
1 (28 ounce) jar prepared mincemeat pie filling
2 cups candied mixed fruit
1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
2 eggs, lightly beaten

Directions

1 Preheat the oven to 300 degrees F (150 degrees C). Butter two 9x4-inch pans, then line them with parchment paper. Butter the parchment paper.
2 Sift flour with baking soda into a medium bowl.
3 In a large bowl, combine mincemeat, fruit, condensed milk, nuts, and beaten eggs. Fold in flour mixture until well combined. Pour into the prepared pans.
4 Bake in the preheated oven until the centers spring back and the tops are golden brown, about 2 hours. Allow to cool in the pans. Turn cakes out onto a wire rack; remove parchment paper.
