Father's Day Pancakes
Description
This Father's Day pancakes recipe features a stack of pancakes made with candied bacon and his favorite beer. It will surely put a smile on dad's face.
Ingredients

8 slices bacon
•
1/3 cup packed brown sugar

1 1/2 cups all-purpose flour
•
3 tablespoons white sugar
•
1 1/2 teaspoons baking powder
•
10 fluid ounces dad's favorite beer, or more if needed
•
3 tablespoons unsalted butter, melted
•
1/2 teaspoon salt
•
1/2 teaspoon vanilla extract
•
1 teaspoon vegetable oil, or as needed

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; set a wire rack over the foil.

Arrange bacon on the prepared wire rack.

Bake in the preheated oven for 10 minutes. Sprinkle bacon with ½ brown sugar. Bake 10 minutes more. Flip bacon; sprinkle with remaining ½ brown sugar and continue baking until bacon is crisp and brown sugar is golden brown, 10 to 15 minutes more. Cool bacon; crumble into small pieces.

Whisk flour, white sugar, and baking powder together in a large bowl. Whisk beer, butter, salt, and vanilla extract together in a separate bowl until combined; gently stir into flour mixture until batter is smooth. Stir in crumbled bacon.

Lightly grease a large skillet with oil; heat over medium-high heat. Pour ½ cup batter into the skillet; cook until edges are brown, about 2 minutes. Flip pancake; cook until bottoms are golden, and centers are set, 3 to 5 minutes more. Repeat with remaining batter.
