Description

This Kentucky Derby dessert recipe features a sweet, chocolaty pecan filling with just a hint of bourbon, which adds a delicious caramel flavor.

Ingredients

1 1/4 cups chopped pecans
3/4 cup brown sugar
3/4 cup light corn syrup
1/2 cup all-purpose flour
1/2 cup butter, melted and cooled
1/4 cup white sugar
4 large eggs
2 tablespoons bourbon
1 1/2 teaspoons vanilla extract
3/4 cup miniature semisweet chocolate chips
1 (9 inch) unbaked deep dish pie crust

Directions

1 Preheat the oven to 300 degrees F (150 degrees C). Spread pecans evenly on a baking sheet.
2 Bake pecans in the preheated oven until toasted, stirring halfway through, about 10 to 15 minutes total; let cool completely.
3 Increase the oven temperature to 350 degrees F (175 degrees C).
4 Whisk brown sugar, corn syrup, flour, butter, white sugar, eggs, bourbon, and vanilla together in a large bowl until smooth. Fold in pecans and chocolate until well combined. Pour mixture into prepared pie crust.
5 Bake in the preheated oven until pie is set, 50 to 60 minutes. Serve warm or chilled.
