Chocolate Surprise Cupcakes

Description

Rich chocolate surprise cupcakes with cream cheese and chocolate chip center. They are also known as black bottom cupcakes.

Ingredients

3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2/3 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla extract
1 (8 ounce) package cream cheese, softened
1 egg
1 cup semisweet chocolate chips

Directions

1 Preheat the oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
2 Whisk flour, 2 cups sugar, cocoa, baking soda, and 1 teaspoon salt together in a large bowl. Stir in water, oil, vinegar, and vanilla until combined. Spoon batter into the prepared muffin cups, filling each 2/3 full.
3 Beat cream cheese, remaining 1/2 cup sugar, egg, and remaining 1/4 teaspoon salt in a medium bowl until light and fluffy. Stir in chocolate chips until incorporated; drop a heaping teaspoonful into each cupcake.
4 Bake in the preheated oven until cupcake centers bounce back when gently pressed, about 25 minutes. Allow to cool before serving.
