Description

This clams casino recipe features baked half-shells stuffed with a garlicky mixture of bread crumbs, sautéed vegetables, bacon, Parmesan, and herbs.

Ingredients

4 slices bacon
24 large clams
2 tablespoons olive oil
1 tablespoon butter
1/2 cup minced onion
1/4 cup chopped green bell pepper
2 cloves garlic, minced
1 cup dried bread crumbs
2 tablespoons grated Parmesan cheese
1/2 teaspoon dried oregano
2 teaspoons dried parsley
1/4 teaspoon paprika

Directions

1 Preheat the oven to 350 degrees F (175 degrees C).
2 Cook bacon in a medium skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate; crumble and set aside.
3 Wash clams, then place on a baking sheet. Heat clams in the preheated oven until clams open, 1 to 2 minutes. Discard any clams that do not open. Remove meat from shells. Chop meat and set aside. Reserve shells.
4 Increase oven temperature to 450 degrees F (230 degrees C).
5 Heat 2 tablespoons olive oil and butter in a small skillet over medium heat. Sauté onion, pepper, and garlic in hot oil-butter until tender. Remove from heat and cool slightly.
6 Mix together chopped clam meat, sautéed vegetables, bread crumbs, Parmesan, and oregano in a large bowl until well combined. Spoon mixture into shells and place on a baking sheet. Sprinkle with parsley and paprika. Drizzle with remaining 2 tablespoons olive oil.
7 Bake in the preheated oven for 7 minutes. Serve hot.
