Description

This pear bread recipe highlights the delicate flavor of fresh pears in this deliciously easy summer loaf. Freezes well if double-wrapped.

Ingredients

2 cups granulated sugar
1 cup vegetable oil
3 eggs
2 1/2 cups pears - peeled, cored and chopped
1 cup chopped pecans
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions

1 Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two 8x4-inch loaf pans.
2 Beat sugar, oil, and eggs together in a large bowl until well combined. Stir in pears, pecans and vanilla extract.
3 In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir into pear mixture until well combined. Pour batter into the prepared loaf pans
4 Bake in preheated oven until a toothpick inserted in center of loaf comes out clean, about 1 hour. Cool in pans for 10 minutes before moving to a wire rack to cool completely.
