Cheesy Sausage and Potato Breakfast Casserole
Description
A crowd-pleasing brunch dish, this potato breakfast casserole brings together sweet onion, sausage, Cheddar cheese, eggs, and grated potatoes.
Ingredients
•
1 1/2 pounds potatoes, peeled
•
cooking spray
•
1 (16 ounce) package pork breakfast sausage
•
1 sweet onion, chopped
•
7 eggs
•
1 (8 ounce) package Cheddar cheese, grated, divided
•
1/2 cup milk
•
salt and ground black pepper to taste
Directions
1
Preheat the oven to 450 degrees F (230 degrees C).
2
Prick potatoes several times with a fork and place onto a baking sheet.
3
Bake in the preheated oven until potatoes are soft, 50 to 60 minutes. Remove potatoes from the oven and let cool until safe to handle, at least 15 minutes.
4
Reduce oven temperature to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
5
Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a medium bowl. Sauté onion in the same skillet until translucent, about 5 minutes. Transfer onion to cooked sausage in the bowl.
6
Add eggs, 1/2 of the Cheddar cheese, milk, salt, and pepper to sausage-onion mixture in the bowl. Mix until well combined.
7
Grate potatoes and add to egg mixture in the bowl. Stir until evenly incorporated, then pour into the prepared dish. Sprinkle remaining Cheddar cheese on top.
8
Bake in the preheated oven until heated through and cheese is melted and bubbly, about 35 minutes.
