Mexican Buffalo Wings with Salsa Sauce

Description

Chicken wings coated in a spicy, tomato-based rub are baked and served with fresh salsa for a Buffalo-meets-Mexico flavor fusion.

Ingredients

2 tablespoons tomato sauce
2 tablespoons coconut sugar
2 tablespoons cayenne pepper
1 tablespoon chili sauce
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground black pepper
salt to taste
15 chicken wings
3 medium tomatoes, diced
1 small yellow onion, diced
1 small red onion, diced
1/2 cup chopped fresh cilantro
2 tablespoons lemon juice
1 tablespoon minced jalapeno pepper
1 pinch white sugar
salt to taste

Directions

1 Mix tomato sauce, coconut sugar, cayenne, chili sauce, cumin, coriander, pepper, and salt together in a large bowl. Add chicken wings; toss to coat. Let marinate in the refrigerator for 20 minutes.
2 Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil. Place marinated wings on the rack.
3 Bake in the preheated oven until wings are browned and dry, about 20 minutes.
4 Meanwhile, combine tomatoes, onions, cilantro, lemon juice, jalapeno, sugar, and salt in a bowl to make the salsa.
5 Transfer chicken wings to a large plate and pour salsa over the top.
