Pannukakku (Finnish Oven Pancake)
Description
This easy recipe for pannukakku, or a Finnish oven pancake, is usually served as a dessert with jam on top, but is equally delicious served with syrup for breakfast or brunch.
Ingredients

nonstick cooking spray

1 2/3 cups all-purpose flour

2/3 cup white sugar
•
1 teaspoon salt
•
1 teaspoon baking powder
•
3 1/3 cups milk
•
2 large eggs
•
1/2 cup margarine, melted and cooled
•
1 teaspoon vanilla extract

Preheat the oven to 420 degrees F (215 degrees C). Spray a 9x13-inch baking dish with nonstick spray.

Mix flour, sugar, salt, and baking powder together in a large bowl. Add milk, eggs, margarine, and vanilla; mix thoroughly with an electric mixer. Batter will be fairly runny. Pour into the prepared baking dish.

Bake in the preheated oven until edges are golden brown, about 30 minutes.
