Description

Creamy mayonnaise, eggs, and veggies give flavor to this easy Southern-style macaroni salad recipe that's great for parties, potlucks, or any ole' day.

Ingredients

1 (16 ounce) package elbow macaroni
6 large eggs, at room temperature
1 (8 ounce) jar mayonnaise (such as Hellman's®)
3 medium tomatoes, quartered
3 stalks celery, chopped
1 white onion, diced
6 ounces radishes, diced
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 pinch celery seed

Directions

1 Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain; return macaroni to the pot.
2 Meanwhile, place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let stand in hot water for 10 minutes. Drain, cool under cold running water, peel, and dice.
3 Stir mayonnaise into macaroni until creamy; stir in eggs. Fold in tomatoes, celery, onion, and radishes until combined. Transfer to a serving bowl; season with salt, black pepper, and celery seeds.
