Description

This slow-cooker Thai pork with peppers recipe simmers pork and peppers in a Thai peanut sauce until aromatic and tender. Serve it over jasmine rice.

Ingredients

2 red bell peppers, thinly sliced and cut into bite-size lengths
1 cup chicken broth
1/3 cup soy sauce
1/3 cup creamy peanut butter
6 cloves garlic, minced
3 tablespoons honey
2 tablespoons minced fresh ginger root
1 teaspoon crushed red pepper flakes
1 pound boneless pork chops

Directions

1 Combine bell peppers, chicken broth, soy sauce, peanut butter, garlic, honey, ginger, and pepper flakes in a slow cooker; add pork, turning to coat.
2 Cover the slow cooker. Cook on Low until pork is tender, 5 to 6 hours.
3 Transfer pork from sauce to a cutting board using a slotted spoon. Shred pork; return to sauce in the slow cooker. Cook until hot, about 10 minutes; serve.
