Ingredients

1 1/2 cups white sugar
1 cup butter
2 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup flaked coconut
1 cup chopped walnuts
1 cup chocolate chips
1/2 cup raisins

Directions

1 Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with butter.
2 Beat sugar and 1 cup butter together in a large bowl with an electric mixer until light and fluffy. Beat in eggs and vanilla until smooth; stir in zucchini.
3 Whisk flour, baking powder, cinnamon, and salt together in a separate bowl; mix into zucchini mixture until well combined. Fold in coconut, walnuts, chocolate chips, and raisins until evenly distributed. Drop dough, about 1 tablespoon per cookie, onto the prepared baking sheets.
4 Bake in the preheated oven until lightly browned, 15 to 20 minutes.
