Easy Rhubarb Upside-Down Cake
Description
This rhubarb cake with marshmallows is a fun one to make with kids. Using fresh rhubarb, marshmallows, strawberry gelatin, and cake mix, flip the cake over so the rhubarb is on top.
Ingredients

2 tablespoons butter

4 cups diced rhubarb

1 cup white sugar
•
1 (3 ounce) package strawberry flavored Jell-O® mix
•
2 cups miniature marshmallows
•
1 (18 1/4 ounce) package white cake mix

Gather the ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

Spread rhubarb in an even layer in the prepared pan. Sprinkle with sugar, then gelatin powder; spread miniature marshmallows in an even layer.

Prepare batter according to cake mix package instructions. Spread batter on top of marshmallows.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Allow to cool.
