Oven-Roasted Tri-Tip

Description

When grilling tri-tip isn't convenient, lean on this oven-roasted method that relies on a simple marinade of soy sauce, cumin, and onion.

Ingredients

1/4 cup vegetable oil
1/4 cup soy sauce
2 teaspoons ground cumin
1 teaspoon crushed garlic
1 teaspoon ground black pepper
1 (2 pound) beef tri-tip roast
1 onion, cut into wedges

Directions

1 Whisk oil, soy sauce, cumin, garlic, and pepper together in a large glass or ceramic bowl. Add tri-tip and onion; toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 2 hours, or up to 24 hours.
2 Preheat the oven to 425 degrees F (220 degrees C). Remove tri-tip mixture from refrigerator; let rest at room temperature while preheating the oven.
3 Remove tri-tip from marinade and shake off excess; place on a rack in a shallow roasting pan. Remove onions from marinade; place around tri-tip. Discard remaining marinade.
4 Roast in the preheated oven until an instant-read thermometer inserted into the center reads 135 degrees F (57 degrees C) for medium-rare or 150 degrees F (66 degrees C) for medium, 30 to 45 minutes.
5 Allow to rest at least 15 minutes before slicing against the grain.
