Mashed Potatoes with Half-and-Half and Sour Cream

Use a slow cooker to make these easy mashed potatoes with half-and-half and sour cream while you turn your attention to preparing the rest of your holiday meal.
Ingredients

4 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces

1/2 cup chicken broth, or more as needed
•
4 cloves garlic, peeled
•
1 (8 ounce) container sour cream
•
1/2 cup half-and-half
•
1 stick butter
•
salt and ground black pepper to taste

Place potatoes in a slow cooker. Add chicken broth and garlic.

Cook on Low for 10 hours or High for 4 hours and 30 minutes until potatoes are fork-tender. You may need to add more chicken broth if potatoes get too dry.

Add sour cream, half-and-half, and butter to the slow cooker. Use a handheld electric mixer to beat until smooth and creamy. Season with salt and pepper. Serve immediately or keep covered on Warm until the rest of dinner is ready.
