Roasted Green Tomato Salsa
Description
This is a tangy, fresh-tasting salsa made with roasted green tomatoes, lime juice, and cilantro. It's great served as a dip with chips or a topping for fish.
Ingredients

1 pound green tomatoes, cored and cut into chunks

1 medium yellow onion, cut into chunks
•
2 medium jalapeno peppers, cut in half lengthwise and seeded
•
1/2 large green bell pepper, top and seeds removed
•
3 cloves garlic
•
1 tablespoon olive oil
•
3/4 cup fresh cilantro
•
2 tablespoons lime juice
•
1 teaspoon kosher salt
•
1/2 teaspoon ground cumin
•
ground black pepper to taste

Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment.

Place green tomatoes, onion, jalapeño peppers, bell pepper, and garlic on the prepared baking sheet. Drizzle with olive oil.

Bake in the preheated oven until tomatoes and vegetables start to blacken and char, about 15 minutes. Remove from the oven and let cool for at least 10 minutes.

Transfer roasted vegetables to a blender or food processor. Add cilantro, lime juice, kosher salt, cumin, and black pepper. Process until well blended. Chill in the refrigerator until serving.
