Description

This yellow squash recipe with bacon, onion, and jalapeño pepper is super versatile and easy to make for a tasty stir-fried summer side dish.

Ingredients

2 slices bacon
2 medium yellow squash, thinly sliced
1/2 medium onion, thinly sliced
1 jalapeno pepper, chopped
1 dash soy sauce
salt and pepper to taste

Directions

1 Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, reserving bacon drippings in the skillet.
2 Add squash, onion, and jalapeño to the skillet. Fry until tender, but still firm, stirring frequently. Crumble bacon into the skillet; season with soy sauce, salt, and pepper. Stir to blend in seasonings and serve.
