Ingredients

8 slices bacon
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup crumbled blue cheese
2 tablespoons all-purpose flour
1/8 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons olive oil

Directions

1 Preheat the oven to 350 degrees F (175 degrees C).
2 Stir spinach and blue cheese together in a medium bowl. Stir in crumbled bacon until evenly combined.
3 Place chicken breast halves on a clean work surface. Divide spinach mixture evenly among the centers. Fold chicken over filling and secure with toothpicks. Combine flour, salt, and pepper in a shallow dish. Coat chicken in flour mixture.
4 Heat oil in a skillet over medium-high heat. Brown chicken on both sides. Transfer to a baking dish and cover with aluminum foil.
5 Bake in the preheated oven until an instant-read thermometer inserted into the thickest part of the chicken reads 165 degrees F (74 degrees C), about 30 minutes. Remove toothpicks before serving.
