Ham, Potato, and Cabbage Stew

Description

Cabbage, potatoes, and some leftover ham are transformed into a tasty stew in just under an hour in this simple stovetop recipe.

Ingredients

2 tablespoons unsalted butter
1 medium onion, chopped
1 cup matchstick carrots
2 teaspoons minced fresh garlic
6 cups chopped cabbage
2 cups chopped cooked ham
2 cups diced potatoes
2 cups chicken stock
salt to taste
1/2 teaspoon ground black pepper, or to taste
1/2 teaspoon ground mustard

Directions

1 Melt butter in a Dutch oven over medium heat. Add onion and cook until it begins to turn clear, 2 to 5 minutes. Stir in carrots and garlic and cook until fragrant, about 1 minute.
2 Stir in cabbage, ham, and potatoes, then add stock, pepper, mustard, and salt. Bring to a boil. Reduce heat to low and cook, stirring occasionally, until cabbage is tender and potatoes are cooked, about 20 minutes.
