Meatloaf Muffins with BBQ Sauce

Description

A zesty mixture of salsa and BBQ sauce does double duty in these mini meatloaf muffins, flavoring the ground sirloin mixture and acting as a sweet glaze on top.

Ingredients

1 teaspoon vegetable oil, or as needed
1 medium onion, cut into chunks
1 medium green bell pepper, cut into large chunks
1 large egg
1/2 teaspoon milk
1 cup barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire Sauce
1 3/4 pounds ground sirloin
1 cup plain bread crumbs
2 tablespoons grill seasoning (such as McCormick® Grill Mates® Montreal Steak Seasoning)

Directions

1 Preheat the oven to 450 degrees F (230 degrees C). Brush a 12-cup muffin tin with vegetable oil.
2 Combine onion and bell pepper in a food processor. Pulse until finely chopped.
3 Whisk egg and milk together in a small bowl. Mix barbecue sauce, salsa, and Worcestershire sauce together in a separate bowl.
4 Combine ground sirloin, onion-pepper mixture, bread crumbs, and steak seasoning in a large bowl. Add egg mixture and 1/2 of the barbecue mixture. Mix with your hands until well combined.
5 Use an ice cream scoop to fill the prepared muffin cups with the meat mixture. Top each mini loaf with a spoonful of the remaining barbecue mixture.
6 Bake in the preheated oven until no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
