Pear and Blue Cheese Salad
Description
A sweet-tangy brown sugar-maple syrup dressing gets its zip from apple cider vinegar and performs as the perfect partner for a leafy green salad tossed with pears and candied pecans.
Ingredients
•
1 (10 ounce) bag mixed field greens
•
1 Bosc pear, cored and sliced
•
1/2 cup sliced red onion
•
1/2 cup chopped candied pecans
•
1/2 cup crumbled blue cheese
•
1/2 cup mayonnaise
•
1/3 cup apple cider vinegar
•
1/4 cup maple syrup
•
2 tablespoons packed brown sugar
•
3/4 teaspoon salt
•
1/4 teaspoon freshly ground black pepper
•
1/4 cup walnut oil
Directions
1
Place salad greens in a large bowl. Add pear, red onion, pecans, and blue cheese; toss to combine.
2
Place mayonnaise, apple cider vinegar, maple syrup, brown sugar, salt, and pepper in a blender; blend thoroughly. With the motor running, pour in walnut oil in a slow, steady stream. Blend until dressing becomes creamy, about 1 minute. Pour over salad; toss to coat evenly. Serve immediately.
