Vegetarian Cottage Cheese Patties

Description

Cottage cheese is combined with eggs, rolled oats, wheat germ, onion soup mix, and thyme; formed into patties, fried, and then placed into a baking dish, covered with mushroom soup and baked until bubbly.

Ingredients

3 eggs
1 1/2 cups cottage cheese
1 1/2 cups quick rolled oats
3 tablespoons wheat germ
1 (1 ounce) envelope dry onion soup mix
1 teaspoon dried thyme
2 tablespoons vegetable oil (for frying)
1 (10 ounce) can condensed cream of mushroom soup

Directions

1 Preheat the oven to 350 degrees F (175 degrees C).
2 Beat eggs in a large bowl. Stir in cottage cheese, rolled oats, wheat germ, soup mix, and dried thyme. Form into 8 patties.
3 Heat oil in a skillet over medium heat; add patties and brown on both sides. Transfer patties to a 9x13-inch baking dish.
4 Combine condensed soup and 1/2 can of water (or milk) in a small bowl; pour over patties.
5 Bake in the preheated oven until soup is bubbly, about 20 minutes.
