Gluten-Free Blackberry Cobbler

1/2 teaspoon gluten-free vanilla extract

1 dash ground nutmeg

Preheat the oven to 350 degrees F (175 degrees C). Coat a 2-quart casserole dish with cooking spray.

Stir blackberries, ¼ cup coconut sugar, and 2 tablespoons flour together in a bowl until blackberries are coated; transfer to the prepared baking dish.

Combine 1 cup flour, 1 cup coconut sugar, buttermilk, coconut flour, butter, baking powder, xanthan gum, sea salt, vanilla, and nutmeg in a bowl; spread over filling.

Bake in the preheated oven until set and golden, about 45 minutes. Cool slightly before serving.
