Description

These mini peach cobblers are perfectly portioned for a summery dessert. Spiked with brandy and flavored with Saigon cinnamon, it's a delicious treat.

Ingredients

10 large ripe peaches - peeled, pitted, and chopped
1/2 cup white sugar
1/4 cup vanilla extract
1/4 cup bourbon
1/4 cup cornstarch
1 teaspoon cinnamon (such as Supreme Saigon®)
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup white sugar
1/2 cup unsalted butter, at room temperature
1 large egg
1/2 teaspoon vanilla extract

Directions

1 Preheat the oven to 375 degrees F (190 degrees C).
2 Combine peaches, sugar, vanilla extract, bourbon, cornstarch, and cinnamon together in a bowl. Fruit filling will be fairly soupy. Divide filling into 8 oven-safe ramekins and place on a baking sheet.
3 Bake in the preheated oven, uncovered, for 35 to 40 minutes, carefully stirring every 15 minutes.
4 Meanwhile, mix flour, baking powder, and salt together in a bowl and set aside. Beat sugar and butter with an electric mixer on medium speed until light and fluffy, about 3 minutes. Beat in egg and vanilla until smooth. Stir in dry ingredients until just combined. Crumble topping evenly over hot filling.
5 Return to the oven and bake until topping has spread and is nicely browned and fruit is bubbly, about 15 minutes.
