Creole Black-Eyed Peas and Rice
Description
A quick, flavorful Creole-style rice dish that you can customize to your liking. Add chili powder or cayenne for extra spice. Great topped with salsa!
Ingredients

1 pound lean ground beef

2 small onions, chopped
•
1 cup chopped green bell pepper
•
1 cup long grain white rice
•
2 cups water
•
1 tablespoon Creole seasoning
•
1 teaspoon ground black pepper
•
1/2 teaspoon garlic powder
•
2 (15 1/2 ounce) cans black-eyed peas, drained
Directions

Crumble ground beef into a deep skillet or large saucepan over medium-high heat. Add onions and green pepper. Cook, stirring, until brown. Drain and discard grease.

Add rice and water. Season with Creole seasoning, pepper, and garlic powder. Bring to a boil, cover, and reduce heat to low. Simmer until water is absorbed, about 30 minutes. About halfway through cooking, stir in peas and continue to cook until warmed through.
